Meal Plan – 5

This is late, I know.  The past few days have been really difficult politically and personally and we were away this weekend, so it was hard to find the will or time to write.  But, it is so easy to make excuses about time and energy when you start a blog and that’s why so many of mine have withered away in the past. Not this time!

So, a major change in terms of my weekly meal plans.  Although I’ve been cooking dinner every night (or nearly) for the past year+, I simply can’t sustain it anymore.  To start, our kitchen is so, so tiny and complex dishes (and even easy ones) make a total mess and require a lot of organisation and planning.  At the end of a long day with Freddy, with a running list of all the things I wasn’t able to do during the day (including write), I simply don’t have the capacity to make home-cooked meals every night.  My husband is pretty shattered after a long day at work in London, not to mention the commute, and can’t really face cooking either.

Also, we don’t have a dishwasher (I know…), which is contributing to low morale among the troops (myself and my husband) so we need to simplify. After this week, we’ll be having some more ready meals, or at least substantial parts of meals that can be popped into the oven or just cooked quickly in one pot on the hob.

So, here’s the last week of Helen using every single dish, pan, and kitchen tool in the house that she makes her husband wash-up every night.

I’m omitting Freddy’s meals this week since, quite frankly, I can’t remember what I’ve fed him. I do remember he’s choked on a lot of stuff that technically he shouldn’t choke on. I realise it’s because he’s not swallowing until he’s had several bites, and then he tries to swallow too much!  Then, after a hard slap on the back, there is copious amounts of vomit everywhere. Trencherman.

*The Warm Courgette Salad is one I found on Ocado that is attributed to Yotam Ottolenghi. I am going to post the recipe because it is.so.good. The Eggplant and Cherry Tomato Salad is from a Sunday Times magazine we bought ages ago.  The Pizza is this delish pizza I bought at Lidl with loads of yummy meat.

    Cooking during the week can be quite tough. Especially during challenging times. One trick I use is to cook ahead on Sunday, one dish of some sort (pesto pasta or a crockpot recipe) to cover 3 days worth of weekday meals. Some math IS sometimes involved and it isn’t always the MOST exciting but, leaves plenty of creative kitchen juice 2-4 days. Last, prayers for you and your family, and your Oma.
