I didn’t put a lot of thought into this week’s meal plan. I had about 15 minutes to do my online grocery shopping, so had to plan and shop quickly! I had enough ingredients to make the Fennel Salad, and I had made some meatballs the week before which were hanging out in the freezer waiting to be eaten. I said in a previous post that I usually leave Italian cooking to the Italians, but I’m actually getting close to making a damn good tomato sauce. My husband agrees.
Freddy was able to have the spaghetti and meatballs because I didn’t add any salt, and I’ll also leave some of the mango and sweetcorn salsa on the side for him.
